
Roast Christmas duck with apples in the oven
Description
The recipe won't take much time. What could be better than a well-cooked duck? It becomes a real centerpiece for the table. I love it when the duck has a golden crust and a rich flavor, so I boldly add plenty of spices and, of course, a lemon. Duck with apples is a classic recipe, and it's the one I'm sharing with you. Serve hot.

1. My duck is small and fresh, so I remove the innards, pluck it, and singe it slightly to get rid of any fine feathers. Then I thoroughly rinse it inside and out.

2. I always pat the duck dry with paper towels to make sure it's completely dry. I mix salt with spices. I cut the lemon in half and thoroughly rub it all over the duck, including the inside, then rub the spice mixture over the duck and marinate it for at least 3 hours, or preferably overnight.

3. My apples are sweet and sour, I wash them, cut them in half, remove the seeds, and slice them into small pieces.

4. Fill the duck tightly with chopped apples, and also place inside the lemon peels used to rub the duck.

5. Secure the duck with strings or toothpicks to keep the stuffing inside during baking.

6. I place foil on a baking sheet, put the duck on it, and wrap it tightly on all sides.

7. Place the duck into a preheated oven at 180-200 degrees Celsius for 2 hours. Then unfold the foil, pierce the duck in several places with a knife, and baste it with the rendered fat. Bake for another hour, turning the duck occasionally.

8. I take the cooked duck out of the oven, cut it into pieces or serve it whole at the table.
