Description

Rogaliki can be made with different fillings, but I like the potato-filled ones best. Do try making rogaliki following this recipe and treat your loved ones to delicious baking. They’re nice with tea or coffee.

    Gather all ingredients according to the list.

    Peel the potatoes, wash them, put them in a pot of salted water, and boil until tender.

    Peel the onion, chop it finely, place it in a skillet with vegetable oil and fry over medium heat, stirring constantly with a spatula, until soft.

    Drain the water from the boiled potatoes, put the potatoes in a bowl, and mash them with a potato masher into a purée. Add the fried onions together with the fat/oil and mix everything. The filling is ready.

    Prepare the dough. Into a spacious bowl, pour the milk and melted butter, crack in an egg, and add salt.

    Whisk these ingredients vigorously with a whisk until the mixture is smooth and uniform.

    Add rye flour to this mixture.

    Knead a soft dough that does not stick to your hands.

    Dust the work surface liberally with rye flour. Pull off a small lump from the main piece of dough and roll it out with a rolling pin into a thin sheet. Cut out a round with a round pastry cutter.

    Place 2 tbsp of potato filling in the center of this round piece of rye dough.

    Pinch the edges as shown in the photo, forming a vatrushka.

    Shape vatrushki from all of the dough and filling and place them on a baking sheet lined with baking parchment.

    In a bowl, combine the egg and sour cream.

    Whisk these ingredients well with a whisk — this is the topping for vatrushkas.

    Pour the topping over the potato filling. Put the baking sheet with the vatrushki into an oven already preheated to 180 degrees and bake for 10–15 minutes.

    Before serving, brush each rogalik with melted butter.
