Cheese rolls with nuts
Description
Perfectly pairs with tea and coffee. If the cottage cheese is grainy, rub it into a smooth mass. Take an egg and beat it with sugar, then mix in the strained cottage cheese, butter, and flour. Knead until you get a uniform dough and refrigerate it for 30 minutes. For the filling, first scald the almonds, then remove their skins, dry, and grind them. Mix the almonds with sugar and cardamom, then rub into a smooth, sticky mass. Roll out the dough into a large sheet about 3 mm thick and cut it diagonally into triangular wedges. Place a portion of the almond filling on the wide end of each triangle and roll up from the wide end to the narrow end, forming a roll. Then shape each roll into a horseshoe. Place the pastries onto a baking tray greased with butter and bake at 230°C (450°F) for 15–20 minutes. Before serving, dust the pastries with powdered sugar. The baked goods are ready. Serve and enjoy.
