
Chocolate-filled croissants
Description
Homemade pastries for tea. You can make croissants without filling, but they are much tastier with chocolate or berries inside. This recipe suggests making soft croissants with chocolate—the chocolate melts when served hot. These pastries turn out not only delicious but also nutritious, as the dough is based on wheat starter. Choose chocolate to your taste—either dark or milk chocolate. Serve cooled or slightly warm.

Prepare the starter. Dilute the starter with room-temperature water and mix well. Add the sifted flour and mix. Cover the mixture with plastic wrap and let it sit for 8 hours at room temperature.

Place the sponge in the bowl of a mixer, add room temperature water, warm melted butter, egg, sugar, and salt. Add the sifted flour and knead the dough in the mixer for 5 minutes at medium speed.

Shape the dough into a ball, transfer it to a bowl greased with vegetable oil. Cover the dough and let it sit at room temperature for 3-4 hours. Turn the dough out onto a floured work surface, flip it over, and shape it into a round form.

Cover the dough with a bowl and let it rest for 15 minutes. Divide the dough into three parts, roll each into a ball and flatten into a thin round. Cut each round into 8 equal rectangles.

Place chocolate pieces on the base of the resulting triangles and roll them up. Shape the rolls into a horseshoe form. Place the pastries onto a parchment-lined baking sheet and cover with plastic wrap.

Leave the croissants at room temperature for 60 minutes. Brush the dough with egg beaten with water and place in a preheated oven at 200°C for 20-25 minutes. Let the croissants cool on the baking sheet.
