
Shortbread crescent cookies with nuts
Description
The most coveted childhood recipe—crispy crescent pastries with jam or nuts. Make them for your children too, for breakfast or to take to school; it is especially easy. Get the little ones involved in rolling the pastries—they love playing with the dough. You can serve them with tea or coffee.

Prepare the listed ingredients. You may substitute the butter with good-quality margarine, but not spread; and the walnuts with hazelnuts or peanuts.

Place the butter in the bowl of a food processor or stand mixer and add 100 grams of granulated sugar. Beat for about 3–4 minutes, but no longer, so the whey does not separate.

Beat in the chicken egg, add the salt, and beat again for 1–2 minutes. If you like, you can add vanilla sugar or flavoring.

Add the flour in portions and work it into the mixture.

The shortcrust pastry will turn out smooth, tender, and pleasant to the touch. Place it in the refrigerator for 20 minutes or in the freezer.

Meanwhile, finely grind the walnuts in a blender with the remaining granulated sugar.

Divide the chilled dough into equal parts and roll each piece into a round sheet, dusting the work surface or board with flour. Cut the circle into eight triangles.

Sprinkle 1/2 teaspoon of nut filling along the wide edge of each triangle. Then, starting from the wide end, roll each triangle into a small roll.

Preheat the oven to 180 degrees and arrange the shaped pieces on parchment paper on a baking sheet.

Bake until golden brown for about 15–20 minutes, depending on the size of the crescents. Place them on a plate and let cool. As they cool, the baked goods will become crisp and crumbly.
