Take the cottage cheese and place it in a bowl. It's better to use homemade cottage cheese with a high fat content. Rub the cottage cheese with vanilla sugar until no lumps remain.

Chop the cold butter with a knife and add it to the cottage cheese.

Be sure to sift the flour so it becomes enriched with oxygen. This will make the dough crumbly and delicious. Add the baking soda. If you don't have butter on hand, you can replace it with margarine.

Knead a firm and elastic dough. If it sticks too much to your hands, gradually add a little flour. Roll the dough into a ball, wrap it in plastic wrap or food film. Let the dough rest in the refrigerator for an hour.

Wash the cherries and remove the pits. If they were frozen, be sure to let them thaw first. Place the berries in a bowl, sprinkle with sugar, and wait until the cherries release juice, which will then need to be drained off.

Take the dough out of the refrigerator and divide it into several equal parts. Roll out each part as thinly as possible into a circle. Cut the circle into sectors with a knife. Place a small amount of cherry filling onto each piece.

Line a baking sheet with parchment paper. Roll the dough with the filling into crescent shapes. Place the resulting pastries on the baking sheet, leaving space between them. Bake the crescents in the oven for about forty minutes at 180 degrees.
