
Rye gingerbread
Description
The recipe won't take much time. This rye gingerbread recipe can be classified as healthy baking. Sunflower oil, rye flour with bran, plus lemon and spices. This version is definitely better than store‑bought gingerbread, especially those that contain a lot of sugar, and the spices are almost imperceptible. Serve cooled or slightly warm.

Prepare the ingredients.

Whisk the egg with sugar.

Add apple juice and the tincture.

Add odorless vegetable oil and continue whisking.

Add the bran. I have hemp bran, but you can use any other kind, as you wish.

We will add the flour in portions.

For aroma, we add lemon zest to the dough, add baking soda and neutralize it with lemon juice. Knead the dough. Add flour a handful at a time.

Cover the baking sheet with parchment paper. Make round pieces and arrange them in a checkerboard pattern. Bake the gingerbread at 180‑190 °C for about 20 minutes.
