
Rye rolls with bran

Prepare all ingredients.

Add sugar, dry yeast, and vegetable oil to warm water. Mix until smooth.

Separately mix both types of flour with bran, salt, spices, and seeds.

Pour the liquid mixture into the bowl with the dry ingredients.

Knead a smooth, even dough. Rather than dusting in a lot of extra flour, brush the dough with vegetable oil so it does not stick to your hands. Shape the dough into a ball, put it in a bowl, and cover with a towel. Leave in a warm place to rise for 1.5 hours.

The prepared dough will increase in volume.

Then divide the dough into equal portions and roll each portion into a round bun. Grease your hands with vegetable oil so the dough doesn’t stick to them.

Spritz the buns with water and sprinkle seeds on top. Place in a warm spot to rise for 40 minutes, then bake in an oven preheated to 220°C for 10 minutes with steam — set a shallow pan in the oven and pour in 200 ml hot water. After that, reduce the temperature to 180°C, remove the pan with the water and bake another 20 minutes until golden brown.
