
Rye bread in a bread maker
Description
The recipe won't take much time. However, it's important to remember that rye flour is capricious and unpredictable. To make the bread truly tasty, dense, and aromatic, you need to follow several rules, which I'll explain in the recipe. So, here's a simple rye bread recipe in a bread machine for your attention. The baking is done. Serve at the table.

Put the malt into a bowl, pour half a cup (or slightly less) of boiling water over it, cover with a towel or plastic wrap, and leave for 30 minutes in a warm place. A slightly sour, bread-like aroma will immediately begin to spread through the house.

Pour the milk and water, previously heated to a temperature of 40-50°C, into the bread machine bowl. Add salt, honey, vinegar, vegetable oil, and spices. Mix well.

Sift the flour. Making bread at home using only rye flour is not easy, so we add a little wheat flour to make it lighter.

Add it to the bowl and place the malt there as well, then crumble the yeast. Your bread machine's instruction manual might specify a different order for adding ingredients to the bowl, but this one is proven.

Turn on the bread machine in the "Rye Bread" mode, if available, or in one of the other modes (for example, "Whole Grain Bread"). Select the loaf weight or size (approximately 1 kg), and the crust color and thickness. It will take a long time to bake—about three hours at least. But the result will exceed all expectations!

After the allotted time, you'll get this beautiful and delicious little loaf! Don't be upset if it doesn't rise much—it's normal and won't affect the taste at all. Let it rest for a couple of hours, then try it. I assure you, next time there won't be a crumb left.
