
Mushroom risotto
Description
This dish won me over with its versatility—it's loved by absolutely everyone, even my vegetarian friends appreciated the risotto. On a hot skillet, melt 25 grams of butter, add finely chopped onion, and sauté until translucent.

Add the rice to the skillet and fry for another 2-3 minutes, stirring constantly.

Transfer the ingredients to a deep saucepan, pour in one-fourth of the broth, and cook over medium heat. Add more broth as it gets absorbed into the rice.

Heat olive oil in a skillet and sauté finely chopped garlic. Add sliced mushrooms and cook over medium heat, stirring, for 5 minutes. Then add salt, spices, and parsley, and remove the skillet from the heat.

When the rice is ready, add the sautéed mushrooms to the pot, mix, add 25 grams of butter, and sprinkle with grated Parmesan.
