
Seafood risotto

Risotto is as popular a dish in Italy as pasta. This recipe has already been perfected to automatic precision by Italian housewives and chefs. In reality, the basic risotto recipe is very simple, and the ingredients can be extremely varied—here we describe a version with seafood, but this dish can also be made with meat, mushrooms, fish, or vegetables. The result is a very delicate and aromatic dish with a creamy, cheesy flavor.

Take a heavy-bottomed skillet and melt butter and olive oil in it. In this oil, sauté finely chopped onion and garlic until golden brown.

Then add the raw rice to the pan and sauté together with the onion and garlic for another 2-3 minutes. The rice should absorb the oil.

Add the wine and cook over high heat for another 8-10 minutes until the wine has completely evaporated.

When the wine has almost completely evaporated, reduce the heat and add a little broth to the pan. As each portion of broth evaporates, add more, ensuring the rice always cooks in the broth. This will take about 20 minutes.

About 5 minutes before the rice is ready, add the shrimp and mussels. Add salt, pepper, and mix.

When the rice is cooked, remove it from the heat, add a little butter, sprinkle with grated Parmesan and fresh herbs. Mix and let it stand for 3-4 minutes, covered.
