The dish is prepared without unnecessary complications. I have a great idea for a hearty and delicious dinner, and I'd like to share it with you and explain how to make pea risotto. In Italian cuisine, this dish is one of the easiest to prepare, in my opinion. The most important thing here is to choose the right rice—in our simple pea risotto recipe, it's best to use Arborio variety, which gives the dish an ideal consistency. Be sure to try making this pea risotto at home; I think it's perfect for beginner cooks and not only. The finished dish can be served right away.

    First of all, prepare all the necessary ingredients. There's no need to rinse the rice, but you can pre-cook the frozen peas for a short time—about 2-3 minutes.

    Next, we place a heavy-bottomed skillet on the stove and melt 20 grams of butter in it, then add olive oil. Into this oil mixture, add diced onion and sauté until almost translucent.

    Add rice to the translucent onion and fry together for 1-2 minutes.

    Then pour tomato juice into the pan and simmer everything for a few more minutes, stirring. In general, during the preparation of risotto, the rice should be stirred as often as possible, almost constantly.

    Now we pour 2 tablespoons of hot water (boiled) or vegetable broth into the skillet. Cook the rice until the liquid evaporates, then add a little more water again, repeating this process until the rice is almost done (it should be soft on the outside and slightly firm inside). And once again, I emphasize that the rice must be constantly stirred with a wooden spatula.

    Add the green peas and the remaining butter to the almost cooked rice, season to taste with salt, and mix everything.

    At the very end, add the grated Parmesan and turn off the heat. Generally, the rice in risotto should be slightly undercooked (al dente, as the Italians say), but you can always cook it to your desired consistency—it won't significantly affect the taste of the risotto.

    Immediately portion the hot dish onto plates, sprinkle the risotto with fresh herbs and grated Parmesan cheese. Enjoy your meal!
