
Milanese risotto
Description
Italian traditional cuisine features many delicious dishes, but the recipe for Milanese risotto is definitely one of the most popular and beloved, at least by me. Its main characteristic is the addition of saffron to the rice, which gives it a beautiful golden hue. As for the taste of this dish, I must admit it's so amazing that whenever I prepare Milanese risotto at home, my family devours it within minutes.

Step 1

First, we pour the meat broth into a saucepan, bring it to a boil, then add saffron and turn off the heat. We set the broth aside in a warm place to keep it hot while we prepare the rice.

In a frying pan, melt a tablespoon of butter, add olive oil, and sauté the chopped onion in this mixture until golden. Then add the rice, stirring constantly, and fry for 1–2 minutes over medium heat. Next, pour in the wine and continue cooking the rice until the liquid has evaporated. Once the wine has cooked off, add a glass of broth and cook the rice until al dente. During cooking, stir the rice very frequently and gradually add more broth as the liquid evaporates.

When the rice is almost ready, remove it from the heat and let it stand, covered, for 1-2 minutes. Then add cold butter, cut into pieces, to the pan and mix the rice.

Sprinkle the finished risotto with grated Parmesan.
