
Bulgur risotto with arugula
Description
From the name of this dish, it's clear that it should be made with rice. But times change, and traditional recipes evolve. In our case, risotto is more about the cooking method. We'll be using bulgur—a type of wheat grain that has undergone special processing. It's delicious and healthy, and the resulting dish will look very similar to traditional risotto. You can enhance this recipe by adding mushrooms, chickpeas, or other ingredients. Feel free to experiment.

We will wash and dry the arugula, thoroughly rinse the bulgur. Peel the onion and garlic and finely chop.

Heat a pan with olive oil and sauté the onion until lightly golden, then add the garlic and cook for another minute and a half.

Add bulgur, mix and sauté for a couple of minutes.

The grain will begin to emit a delicious nutty aroma.

Pour a glass of boiling water over the grain, reduce the heat, and add chopped tomatoes, salt, and pepper.

And cook, stirring, for about 7-10 minutes. Cooking time depends on the grain (check the package instructions). Almost all the water should evaporate.

Add the chopped arugula and mix.

And cook for another minute to a minute and a half.
