
Homemade rice vinegar

Recipe for homemade sauce. In European cuisine, there are black, red, and white rice vinegars. The most accessible type for homemade preparation is white vinegar. White rice vinegar turns out softer and slightly sweeter than red or black varieties. It is ideal not only for seasoning rice but also for dressing salads or various appetizers. Prepare all the ingredients. Use round-grain rice.

Pour warm water over the rice and let it sit at room temperature for 2-3 hours. Then refrigerate overnight.

Pour the water into a saucepan. We no longer need the grain; you can use it to prepare other dishes or feed it to animals. Add sugar, place over low heat, and cook the resulting syrup for 15 minutes, stirring occasionally.

After the specified time has elapsed, remove from the stove and let cool to a warm temperature. To speed up the process, you can pour the liquid into a deep bowl. Add the yeast when the temperature becomes comfortable for them and mix well.

Pour the syrup into a larger glass jar, cover with gauze, and leave in a warm, dark place for 5 days.

After 5 days, strain into a clean sterile jar, cover again with gauze, and leave for 20-30 days, avoiding sunlight.

Then carefully drain the rice vinegar from the jar, leaving the sediment at the bottom. Before bottling, bring the rice vinegar to a boil, then strain it and pour into small sterile bottles with lids.
