
Rice dessert with raisins

1. Rinse the rice and soak it in a large amount of water for 2 hours.

2. Twenty minutes before the rice is done, combine 4½ cups of coconut milk, salt, cinnamon, ginger, cloves, and nutmeg in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium, cover, and simmer for 15 minutes.

3. Drain the water from the rice and add it to the pot. Mix and bring to a boil over medium heat.

4. Reduce the heat to low and cook until the rice absorbs the liquid.

5. Add sugar and raisins, mix and bring to a boil over medium heat. Reduce heat to low and cook for another 15 minutes without stirring.

6. Add 3/4 cup of coconut milk and mix.

7. Increase the heat to medium and cook for about 20 minutes. Remove the spices from the pot.

8. Spoon the rice dessert onto individual serving plates. Let cool at room temperature before serving. Store covered in the refrigerator.
