
Rice baskets with Chicken Tikka Masala
Description
The dish is prepared without unnecessary complications. The masala (spice mix) for chicken includes some exotic spices such as asafoetida, fenugreek seeds, or kalonji. However, if you can't buy ready-made masala, that's no reason to give up this delicious dish. Use readily available spices: coriander, paprika, chili pepper, cumin, black pepper, garlic, plus cinnamon, ginger, cardamom, turmeric, and cloves. It will be tasty and aromatic. The dish is ready to serve.

Mix the yogurt with tandoori masala or tikka, or prepare your own spice blend. Add grated ginger and garlic powder, season with salt, add lemon juice and a pinch of sugar, then mix well.

Add the chicken cut into large cubes, mix well, and let marinate for half an hour.

Prepare raita with cucumbers, spicy herbs, and yogurt, then refrigerate.

Boil the rice, cool it, and add a little dried onion and parsley. Beat the egg whites with a fork and mix them with the rice.

Line three ramekins with parchment paper, grease with butter, and press rice into them with your fingers to form little baskets. Place the ramekins into a preheated oven at 200 degrees for about 15–20 minutes. Remove the baked baskets from the molds, peel off the parchment paper, and cover with a towel to keep them warm.

Thread the chicken onto pre-soaked wooden skewers and grill until cooked through, about 15–20 minutes. It's best to arrange the skewers on a rack, placing a baking pan with a little water underneath. This way, the chicken pieces will brown nicely but won't dry out.

Heat the oil in a skillet and add the cumin, caraway, and mustard seeds. Stirring, toast the spices until fragrant. Add the paprika and mix well.

Add the finely chopped onion and garlic, then add the chili pepper. Sauté for a minute, then add the tomato paste. Cook everything together for another minute.

Add the remaining marinade, 50 ml of water, and the cream. Mix well and heat the sauce for 2 minutes.

Place the chicken pieces in the sauce, removing them from the skewers. Heat for a couple of minutes.
