
Rice casserole with pumpkin
Description
The recipe won’t take much time. This casserole is delicious served with sour cream, honey, condensed milk, or jam. A rice and pumpkin casserole works both as dessert and as a standalone meal. Orange zest lends a piquant aroma; the result is hearty yet refined. Be sure to try it. You can serve it with tea or coffee.

Prepare all the ingredients.

Wash the rice, pour milk over it, and cook until half done. Cool slightly and transfer to a deep bowl. You can also use leftovers from yesterday’s dinner.

Add eggs, sour cream and sugar to the rice.

Grate the pumpkin on a coarse grater; remove the orange zest with a fine grater. Add to the other ingredients.

Grease your baking dish with butter, sprinkle the bottom and sides with semolina. Spread the mixture evenly and smooth the top. Bake in the oven at 180°C for about 30 minutes.
