Rinse shiitake mushrooms (also known as Oriental mushrooms) under cool running water, then slice them into strips and blanch with boiling water. Cut onion and Chinese cabbage into half-rings. The final dish will be spicy and piquant due to the addition of garlic; if you prefer a milder, more delicate flavor, reduce the amount of garlic and soy sauce.

Drop a little oil onto the skillet (or simply wipe the skillet with a cotton pad moistened with oil). You need very little oil. Once the skillet is well heated, add the onion and mushrooms. Fry them together for 10 minutes, stirring constantly, then add the cabbage, season with salt, remove from heat, and cover with a lid.
