
Thai-style rice with coconut milk
Description
The recipe won't take much time. Soft, slightly sweet rice infused with coconut flavor makes a perfect accompaniment to any curry. Coconut rice will taste even better if topped with toasted coconut flakes. Add a bit of butter and cream, and you'll have a delicious dessert. This rice is almost no different to prepare from regular rice and won't take you long. Serve hot.

1. Combine coconut milk with water to make 4 cups of liquid.

2. In a large deep saucepan, melt the butter over medium heat. Add the rice and cook, stirring, for about 2 minutes.

3. Add coconut milk with water, salt, sweetener of your choice, and flavoring if using. Mix well. Bring the rice to a boil, stirring occasionally to prevent burning.

4. When the rice begins to boil, reduce the heat to medium. Place the pot lid slightly ajar to allow steam to escape. Cook for 15-20 minutes, until the rice has absorbed all (or almost all) of the liquid.

5. Turn off the heat, tightly cover the pot with a lid, and let it stand for 5-10 minutes. Before serving, fluff the rice with a fork or chopsticks. If desired, sprinkle the rice with coconut flakes. Serve the rice warm.
