
Rice
Description
The recipe won't take much time. Pilaf can be prepared either in a multicooker or on a regular stove. You don't need a special cauldron as in Azerbaijani plov—a regular pot will do. You can make a vegetarian version with vegetables and dried fruits, or a meat version. Serve the dish hot.

1. Use a kazan or a regular pot, place it on the heat and warm it with olive oil.

2. Peel the onion and pepper, chop finely and add to the pot, season with salt and pepper, cook for 5 minutes.

3. Wash the rice and add it to the vegetables, mix and fry for 3-5 minutes.

4. Pour the chicken broth over the contents, add orange zest (strips) and bay leaf.

5. Bring the contents to a boil, then cover with a lid, reduce the heat, and simmer for about 20 minutes.

6. After the required time, remove the pot from the heat, do not open the lid, and let it sit for another 5-10 minutes.

7. Return the pot to the heat and, if necessary, add water (if the rice is too dry), add the raisins and chopped almonds, mix (reserve a little for garnish).

8. Serve the dish immediately after cooking, garnish with raisins and crushed cumin to taste.
