
Roman pizza
Description
Baking is simple and quick. "Roman pizza" is like an echo of poverty, when there was only a little flour in the house, dough was made, and then everything that could be found in the house was placed on it. The shape of a traditional Roman pizza is rectangular, the dough is thin, fairly liquid, and only a small amount of topping is added. The dough should mature for a long time, up to four days. This pizza is prepared according to an "express recipe", but with the basic principles observed. Watch the step‑by‑step recipe and try to make your own "Roman" pizza. It can be served with tea or coffee.

Prepare the ingredients.

Pour warm water into the mixing bowl, dissolve the salt in it, and add 1 tablespoon of olive oil.

Add the yeast to the flour, mix.

Add the flour to the water and knead the dough. The dough will be liquid, but don’t let that bother you. During the dough proofing process, you should perform at least five foldings. Traditional dough is prepared for 4 days; in an express version, the proofing time is reduced to 10 hours. In my recipe, since “fast” yeast is used, the folding is done 5 times at 30‑minute intervals.

Prepare a baking sheet, rub your hands with olive oil, place the dough on the sheet and stretch it with your hands into a rectangular sheet. Use your fingertips to make indentations in the dough, as you would for focaccia, and drizzle with olive oil. The oven should be preheated to its maximum temperature. Send the pizza base to the oven for a preliminary bake for 5 minutes.

While the pizza crust is in the oven, tear the mozzarella by hand into pieces.

Remove the pre‑baked pizza base from the oven.

On the pre‑baked pizza crust, spread tomato passata or tomatoes in their own juice, add mozzarella, olives, and sprinkle with dried herbs. Send it back to the oven for 10 minutes.

On a fully cooked pizza, place slices of bacon, fresh basil (if you can find any), lightly drizzle with olive oil, and serve at the table. The pizza turns out with a thin, crispy crust and the flavor of all the ingredients is wonderfully noticeable.
