
Roman pasta
Description
The dish is prepared without unnecessary complications. To make Roman pasta, choose high-quality pasta and follow all the cooking instructions properly. The dish is actually very simple, requiring only pasta, cheese, butter, pepper, and a little free time. Romans typically prepare this pasta with Pecorino Romano or Caciocavallo cheese, but it's acceptable to substitute other similar cheeses—semi-hard or hard varieties. The finished dish can now be served.

Prepare all the ingredients.

Cook the pasta in salted water until al dente (slightly undercooked). Drain the water, but be sure to reserve some for the sauce.

In a skillet, melt a piece of butter.

Add water and the pepper mixture, which should first be crushed in a mortar.

Bring to a boil, and add the paste.

Cook the pasta with the sauce for another minute or two, and at the very end add the grated cheese.

Quickly mix everything so that the cheese is evenly distributed, and immediately transfer the pasta to a plate.
