
Riga bread
Description
Bake bread using a mixture of rye and wheat flour. You can decorate the loaf with caraway seeds, black and white sesame seeds, or sunflower seeds. Eat the bread right after baking or once cooled. The taste of Riga bread will be delicious with butter and jam, with borscht, or with meat.

1. Slightly warm the water, mix in the yeast and vanilla sugar. Let the mixture sit for 5-10 minutes, then add vegetable oil and honey (can be floral or buckwheat).

2. Into a large bowl, add rye and wheat flour, salt, cumin, and pour in the liquid ingredients.

3. Knead the dough by hand for about 10 minutes, then transfer it to a bowl greased with sunflower oil, cover with plastic wrap or a towel, and let it rest for 120 minutes.

4. One hour after kneading, take out the dough, knead it by hand, then transfer it back to the bowl and cover.

5. After the required time, transfer the dough to a work surface, shape it as desired, and make shallow cuts. Cover the bread with a towel and let it rest for 40–60 minutes.

6. Transfer the bread to a baking sheet lined with parchment paper, lightly spray with water, and bake in a preheated oven at 190 degrees for 40 minutes.
