
Duck Rillettes
Description
A delicious appetizer for any gathering. Serve the fragrant rillettes chilled with baguette slices, butter, and hot tea or coffee. This meat dish can also be served as a cold appetizer with wine, a cheese platter with berry sauce, or mousse. The appetizer is ready. Serve immediately.

Step 1

Prepare the listed ingredients. Rinse the duck in water and cut into pieces.

Place the duck pieces in a baking dish. Preheat the oven to 150°C.

Season the meat with salt and pepper, add sprigs of rosemary or thyme. Pour in the water and place the container in the oven, covering with foil.

Bake for about 1.5 hours, then remove the foil and bake for another 1–1.5 hours, turning the meat over from time to time. Be sure to add water so the meat doesn’t turn out too dry. As soon as the meat starts to come easily off the bones — the duck is ready!

Remove the pan from the oven and shred the meat with two forks, or with your hands once it has cooled slightly. Add the skin as well.

Place all the meat in a jar or a small container and cover it with the fat from the roasting pan left after baking the duck. Let cool to room temperature, then transfer to the refrigerator or place somewhere cool.

Serve the duck rillettes chilled, together with unsweetened baked goods, a grain side dish, pasta, or mashed potatoes.
