
Chicken Rillettes
Description
A delicious appetizer for any gathering. Juicy chicken rillettes are served at breakfast with toasted bread or croutons, at lunch with any side of grains, pasta, or vegetables, and at dinner with cheese and vegetables. The dish keeps for 2–3 days when refrigerated.

Prepare the specified ingredients. If you wish, you can use butter if you decide to store the rillettes in a jar—you will need to cover them with melted butter.

Rinse part of the chicken in water, trim off the membranes and tendons, and place it in a kazan or pot. Add bay leaves and hot water, put the pot on the stove, and braise for about 1 hour if the chicken was broiler chicken, and 2 hours if it was home-raised, farm chicken.

Peel the carrots and onion, and rinse them in water. If the vegetables are small, use them whole; if they are large, use halves. Add them to the container so they impart their flavor and aroma to the chicken.

After the specified time, the meat and vegetables will be extremely tender.

Place the meat and vegetables in a deep container and chop them with two forks. Do not pour out the broth — add it to the pâté a tablespoon at a time until it reaches a juicy consistency.
