
Recipe for delicious homemade marshmallows
Description
Making marshmallows at home is not difficult: you just need to buy agar-agar and invert syrup. But even if you don't have invert syrup, don't worry—you can add 400 g of sugar to the mixture and cook it a bit longer, so that the syrup thickens properly. You can taste the marshmallow mixture before it sets, and add anything you'd like, if necessary. You can pipe the dessert onto a baking sheet in any shape and size, depending on your preferences.

1. Cut the apples into cubes, place them on a parchment-lined baking sheet, and bake in a preheated oven at 180 degrees for 15 minutes. Transfer the apples to a blender and puree until smooth.

2. Transfer the apple puree to a bowl, mix with sugar over low heat until the sugar dissolves. Add vanilla. Mix the strawberry jam with agar-agar, stir well and set aside for 15–20 minutes.

3. Add the invert syrup and place over heat. Cook until the temperature reaches 110°C. Meanwhile, beat the purée with the egg white at low speed on a mixer, gradually increasing the speed. With the mixer still running, slowly pour in the syrup in a thin stream.

4. Increase the speed to medium and beat for 10 minutes. Transfer the mixture to a piping bag and pipe the meringue onto a parchment-lined baking sheet.

5. Leave the marshmallows at room temperature for 1-4 hours until set. Mix powdered sugar with starch and sift the mixture over the marshmallows.
