Sort the gooseberries, removing leaves and spoiled ones, but do not wash the berries.

Process the gooseberries through a meat grinder into a jelly-like mass.

Transfer the berry mixture to a large saucepan. Pour in purified water (in a 1:3 ratio).

Next, add sugar in the same proportion. Leave the must covered for 10–12 days at 20 degrees. Stir it every day, or better yet, transfer it to a clean container.

After this, separate the pulp from the liquid. Press it through a sieve or colander and discard.

Strain the finished juice through a sieve.

Pour the juice into a bottle with an airlock. Leave it to ferment at 18-22 degrees.

Every few days, remove the sediment with a siphon. Also, add a little sugar, previously mixed with the future wine (2-3 tablespoons of 40-degree liquid).

Filter it this way for 2-2.5 months. Bottle the finished wine and seal the bottles. Enjoy your tasting!
