
Pumpkin Pancakes Recipe

This amount of ingredients will yield about 20 delicious pancakes. The kefir must be at room temperature!

Peel the pumpkin and grate it on a grater with medium holes.

Beat the eggs with salt and sugar (regular and vanilla). Beat without overdoing it, just until smooth and uniform.

Add kefir and mix.

Add the grated pumpkin and mix. If your pumpkin is very juicy, drain the juice into a separate container.

Add flour mixed with baking soda.

The dough should be thick, like sour cream. If it turns out too thick, add pumpkin juice.

Heat a skillet with a small amount of vegetable oil and spoon the batter onto it, forming pancakes. Fry over medium heat. I fried them at level 5, out of a total of 9 levels on the stove.

Fry the pancakes, then flip and fry the other side. About 3-4 minutes per side.
