
Recipe for tender cookies
Description
Delicious baked treats for the whole family. The base of these cookies is shortbread dough. If you overbake it in the oven, the texture will become more crumbly and dry. You can shape the cookies into any size or form you like. This time, I'm making little sandwich cookies filled with a mint-flavored buttercream. For a festive look, add food coloring. Serve with tea or coffee.

For the dough: place the butter and cream cheese into the bowl of a mixer and beat until fluffy. Gradually add the granulated sugar and continue beating for a few more minutes.

Sift the flour and add it to the bowl tablespoon by tablespoon, then knead the dough.

Shape into a ball and wrap it in plastic wrap, then refrigerate for 20-30 minutes.

Take out the dough and roll it out into a sheet about 0.5 centimeters thick. Use special cutters to cut out two types of cookies.

Place everything on a baking sheet and bake in a preheated oven at 190 degrees for 12-14 minutes. Remove the baking sheet with the baked cookies and let cool.

Make the cream: using a mixer, beat the butter with sugar, mint extract, and add food coloring (as much as needed to achieve the desired color intensity).

On one half of the cookie, spread the cream, then top with the second half and press down gently; sprinkle with sugar on top.
