
Kalmyk tea with milk recipe
Description
The drink is quick and easy to prepare. Kalmyk tea is also known as "jompa." It is made from a special variety of green tea sold in bricks (not in bags or loose-leaf form). It can be consumed straight or diluted with milk, as in this preparation method. Serve it for breakfast or afternoon tea.

Pour water into a saucepan and add crushed green tea. Place the saucepan over heat, bring to a boil, then simmer gently for ten minutes.

Pour in ¼ of the milk and bring to a boil, then add another portion of milk and bring to a boil again, repeating this process with all the milk.

Add all the spices and salt to the saucepan. Bring the contents to a boil and simmer over medium heat for 5-7 minutes, then cover with a lid and let steep for 10 minutes.

Scoop the drink with a ladle and pour it back from a great height; repeat this 20-30 times.

Strain the tea through a fine sieve to remove the spices, then pour it into cups and serve, placing a piece of butter in each cup.
