Meringues literally melt in your mouth, and somehow there's never enough of them. Here is a simple, basic recipe for homemade meringue. It's not difficult to prepare—just follow all the rules carefully.

The mixer bowl and beaters must be completely dry and clean, with no traces of fat!!! Carefully separate the egg white from the yolk and start beating at low mixer speed. You can add a few drops of lemon juice.

When the egg white begins to foam, increase the mixer speed and gradually add powdered sugar, one spoon at a time.

Continue beating, after a minute add the next portion of powder, and so on.

Beat until the mixture increases in volume, the whipped egg white with powder holds on the whisk, and the sharp peaks begin to droop.

Pipe the egg white-sugar mixture using a pastry bag, spoon, or paper cone. Shape the meringues to the desired size.

And dry in a preheated oven at 100 degrees for about an hour and a half. Drying time depends on the size of the meringues. Then turn off the oven and wait for it to cool down completely.
