
Pork ribs in rum glaze
Description

Step 1

1. To make the glaze, place all the glaze ingredients in a large saucepan and cook over high heat. Bring the contents of the pan to a boil, stirring frequently, until the sugar dissolves. Once the mixture boils, reduce the heat to medium and cook for approximately 25 to 30 minutes. Remove the glaze from the heat and strain through a fine-mesh sieve. Keep the glaze warm until ready to use.

2. Preheat the oven to 135 degrees. Place the ribs on a baking sheet with a rack. Evenly sprinkle with Adobo seasoning. Rub the seasoning into the meat and let it sit for at least 20 minutes.

3. Pour the chicken broth into the baking dish. Bake in the oven for 1 1/2 to 2 hours, until the ribs become very tender.

4. Remove the ribs from the oven and let them cool for 15 to 20 minutes. Using a brush, coat the ribs with the prepared glaze, about 3 tablespoons of glaze per rack. Place the baking sheet back into the oven and bake until the ribs are browned and caramelized, about 5 minutes.

5. Remove the ribs from the oven and place them on a cutting board. Using a sharp knife, cut the ribs apart and, if desired, glaze them additionally.
