Pork ribs in sweet and sour sauce

Description

The dish is prepared without unnecessary complications. I really love Asian cuisine because it often features quite unusual combinations of ingredients and flavors, and this recipe for sweet and sour ribs has long ceased to be exotic for me, as I use it quite often. I especially like it because, unlike other complex Asian dishes, it requires relatively few ingredients and is very easy to make. That's why I prepare this dish both for dinner and when we have guests—these delicious ribs always go down a treat. And if you're interested, I'll now tell you how to make it. The finished dish can be served at the table.

    Rinse the pork ribs under cold water and cut them into smaller pieces.

    In a saucepan, bring water to a boil, add the ribs into the boiling water, and cook for one minute, then drain the water. Add one tablespoon each of sugar and fish sauce to the ribs, add minced garlic, mix everything well, and let the ribs marinate for 10-15 minutes.

    In a frying pan, heat vegetable oil and sauté the chopped onion until golden brown, then add the marinated ribs.

    Sear the ribs until golden brown, then pour water into the pan, just enough to barely cover the ribs. Cover the pan with a lid and simmer the ribs over low heat for 30-35 minutes.

    Peel the tomatoes and cut them into small cubes. When the water in the skillet has reduced by half, add the tomatoes, stir, and cook everything together for 7–10 minutes. Now dissolve the starch in a small amount of water and pour it into the skillet, cooking for a few more minutes. Then add one teaspoon each of fish sauce, vinegar, and sugar, mix well, taste, and if necessary, add more vinegar or sugar. Once the desired balance is achieved, turn off the heat and let the ribs steep for a few more minutes. Now they're ready, and you can enjoy them.
