
Pork ribs with paprika and cinnamon
Description
Paprika and cinnamon give the ribs a pleasant sweet flavor. Serve the ribs with potatoes or vegetables as a side dish.

1. Preheat the oven to 95 degrees. In a bowl, combine brown sugar, chili powder or paprika, salt, garlic powder, cloves, and cinnamon. You can mix all the spices together with a fork.

2. Place each piece of rib on a piece of foil large enough to wrap the ribs. Sprinkle the ribs with the spice mixture, rubbing it in thoroughly on all sides.

3. Wrap the ribs in foil and place on a baking sheet.

4. Bake the ribs for 4 hours at 95 degrees, then reduce the temperature to 80 degrees and bake for another 2 hours, until the meat is easily pierced with a fork.

5. Unwrap the foil and pour the accumulated juice from the ribs into a saucepan. Bring to a boil and simmer until the liquid is reduced by half. You will get a thick, sweet sauce that can be easily stirred with a spoon. Mix the sauce with smoked pepper and vinegar.

6. Place the cooked ribs on a serving dish and either drizzle with sauce or serve the sauce separately.
