Description

To prepare this dish, you will need pork ribs. I recommend choosing ribs cut crosswise, as they will cook more evenly and can easily be portioned. Also, select ribs that aren't too fatty and have plenty of meat—this way, you'll fully enjoy the amazing flavor of the dish. The taste is truly excellent. I should note that pork ribs baked in the oven are delicious on their own, but when cooked in a sauce of red wine and tomatoes, it becomes pure magic. The dish develops such rich new flavors and aromas that you won't want to overshadow them with heavy side dishes. Therefore, I recommend serving "dragon ribs" in red wine sauce with light vegetable salads—it will taste absolutely perfect.

    Prepare all the necessary ingredients. Preheat the oven to 180 degrees. Rinse the ribs and dry them with paper towels.

    Place the ribs in a baking dish and season both sides with salt and pepper. I recommend using freshly ground pepper: it has a more pronounced aroma and richer flavor. If you don't have a pepper grinder, you can use a coffee grinder or simply crush the peppercorns with a rolling pin after placing them in a plastic bag.

    Add 150 ml of water to the dish, cover the dish with foil, and place in the oven for 1 hour (temperature — 150 degrees).

    Meanwhile, prepare the wine sauce. You can make it in a sauté pan or simply in a heavy-bottomed skillet. Pour wine and vinegar into the pan, add sugar and a little pepper.

    Also add tomato sauce and tomato paste, mix well and simmer over low heat for 15 minutes.

    The sauce should become completely smooth and have a pleasant burgundy color.

    Remove the baking dish with the ribs from the oven and take off the foil. Using a basting brush, coat the ribs on top and sides with the prepared sauce, then return to the oven for another 30 minutes (at 180 degrees).
