
Beet and Cheese Ravioli

Step 1

1. Preheat the oven to 200 degrees. Prick the beet several times with a fork. Place the beet in the oven and cover with foil. Bake until tender, about 1 hour. Remove from the oven and let cool. Peel the skin and grate the beet into a bowl or process using a food processor. Mix the beet with goat cheese.

2. Divide the dough in half (you should have 4 portions). Shape the dough into rectangles. Place the filling on 2 portions of the dough.

3. Cover the top with the remaining rectangles of dough. Press down lightly. Avoid trapping air inside. Use a pastry wheel to cut the dough into ravioli.

4. In a medium saucepan, bring salted water to a boil. Add ravioli. Melt butter in a skillet over medium heat. When the ravioli are cooked and float to the surface, transfer them from the pot to the skillet. Sprinkle with poppy seeds and sauté until golden brown on each side. Place onto a plate. Before serving, if desired, sprinkle the ravioli with additional poppy seeds and grated Parmesan cheese.
