
Egg ravioli
Description
The recipe won't take much time. Be careful when making egg ravioli so that the eggs don't spread out over the dough. Prepare the ravioli dough using the standard recipe: for every 200–250 grams of flour, use one egg, one spoon of oil, and one spoon of water. The dough should be elastic and not stick to your hands. After kneading, let the dough rest for half an hour. You can replace asparagus with spinach or herbs mixed with grated cheese. The wide variety of fillings gives you plenty of room for creativity; just make sure the filling isn't too soft—it should hold its shape. Good luck! Serve hot.

Break off the tough ends of the asparagus and chop. Sauté the onion and asparagus in a pan for 5 minutes.

Pulse the asparagus with the onion in a blender and mix with ricotta, egg, breadcrumbs, grated Parmesan, salt, and pepper. Roll out the dough and place the filling at equal intervals.

Place an egg, whole or just the yolk, into the indentation made in the filling.

Cover the eggs with another piece of dough and gently press the dough around the filling.

Cut out ravioli using a glass.
