
Ravioli with three types of cheese
Description
The recipe won't take much time. Ravioli is a type of Italian pasta, small dumplings with various fillings. Ravioli are made from unleavened dough, shaped into various forms: square, half-moon, or oval. Only Italians know. Serve hot.

Mash the ricotta with a fork.

Grate the cheddar and Parmesan, add to the ricotta. Add two eggs, a pinch of salt, and black pepper.

Mix everything until smooth, cover with plastic wrap, and refrigerate.

For the dough, mix two eggs, salt, olive oil, flour, and water. Knead until smooth. Continue kneading the dough for about 10–15 minutes until it becomes soft and elastic.

Roll out the dough very thinly and cut out circles using a glass.

Place a spoonful of filling on each circle, then pinch the edges to seal.

Using a fork, give the ravioli a pretty fluted edge.

Do the same with all the remaining ravioli.

Boil the ravioli in salted water for 5-6 minutes. Serve immediately with sauce or simply with butter.
