That's exactly how we do it at home. We fill up several trays with ravioli, freeze them, and then take them out during those critical moments when we're too lazy or short on time. Ricotta is a soft, creamy cheese, quite moist. If you can't find it in the store, just buy cottage cheese and process it through a meat grinder or blender.

1. In a large bowl, mix together flour, semolina, and salt.

2. Make a depression in the center of the dry mixture.

3. Beat four eggs, then add olive oil and mix.

4. Pour the egg mixture into the indentation made in the flour and begin mixing. Gradually add boiled water.

5. Mix the batter well with a spoon.

6. Turn the dough out onto a floured work surface. Continue kneading by hand.

7. In a separate bowl, place ricotta cheese, four eggs, a teaspoon of salt, and black pepper. Wash the basil (or parsley) and finely chop. Add to the cheese and eggs. Mix thoroughly until smooth.

8. Now you need to roll out the dough quite thinly. You can do this with a rolling pin, or you can use a special device for making dough.

9. Place the cheese filling with a spoon onto a rectangular strip of rolled dough. Leave a 2–3 cm space between each portion of filling.

10. Fold the rectangle in half, leaving the filling in the upper part. Cut the dough with the filling into ravioli. Cut in the hollow spaces!
