
Ravioli with mozzarella
Description
This recipe won't take much time. Here's how to make mozzarella ravioli: 1. First, prepare the filling. In a small bowl, mix grated mozzarella, 2 eggs, salt, and pepper. Stir thoroughly until a smooth, paste-like consistency is achieved. Place the filling in the refrigerator while you prepare the dough. 2. Make the dough. In a large bowl, beat 2 eggs with a fork, then add water, oil, and salt. Mix until well combined. 3. Add 1 cup of flour to the mixture. Stir with a fork until uniform. Gradually add the remaining flour and knead to form a dough. 4. Once the dough becomes firm enough, remove it from the bowl and knead for 10 minutes on a floured work surface. The dough should become very elastic. 5. Roll the dough out thinly (about half a centimeter thick) using a rolling pin. 6. Cut out circles from the dough (you can use a glass for this). Place a tablespoon of filling in the center of each dough circle, then seal the edges. Alternatively, if you have a special ravioli mold, the process becomes easier: simply place the rolled-out dough sheet onto the mold, add filling on top, and press down to cut all ravioli at once. 7. Your ravioli are now formed (either by hand or with a mold). Bring a pot of water to a boil, add the ravioli, and cook until done (5–6 minutes). Cook only as many as you plan to eat immediately; the rest can be frozen. Mozzarella ravioli are ready. Serve hot with your favorite sauce.
