Description

The dish is prepared without unnecessary complications. It's better to use a special pasta roller attachment for a food processor to roll out the dough, as this will make the dough evenly thin and the ravioli will look more attractive. If you're not planning to cook all the ravioli immediately, freeze a portion in the freezer. Serve this dish hot with your favorite sauce. The finished dish is ready to be served.

    Beat 6 eggs with a mixer. Combine them with sifted flour and knead the dough. Cover the bowl with plastic wrap and let it rest in the kitchen for half an hour.

    Finely chop the onion, carrot, and bacon (a food processor works well for this). Transfer the mixture to a heated skillet or saucepan, add a glass of water. Cook for about 7 minutes over medium heat until the water has evaporated.

    Add salt, pepper, and nutmeg, sauté the vegetables until browned, then let cool. Mix them with chopped parsley, cream cheese, grated sharp cheese, and 2 egg yolks.

    Divide the dough into 6 parts. Roll each part into a thin rectangular layer. Stack the dough sheets on parchment paper sprinkled with cornmeal, cover with a towel.

    Place a teaspoon of filling onto the dough sheet, spacing each about 2.5 cm apart. Cover with the second piece of dough. Using the dull side of a knife, press around the filling to seal it between the dough layers. Cut into square-shaped ravioli using a decorative knife.

    To prepare ravioli, drop them into boiling salted water and cook for 8-10 minutes.

    For the sauce, sauté mushrooms in vegetable oil, season with salt, and squeeze in garlic. After a few minutes, add tomato wedges and simmer for 4-5 minutes. Remove from heat and stir in parsley and basil.
