
Ratatouille in a multicooker

Here are our ingredients. If your zucchini has a tough skin, it needs to be peeled.

Slice the eggplant and zucchini. You can cut them into rounds about 1 cm thick, or halve the rounds if the vegetables are large. If you're worried the eggplant might be bitter, sprinkle it with salt, rinse it after about 10 minutes, then gently squeeze out the excess moisture.

Remove the core and seeds from the pepper and cut it into small pieces.

Wash the tomatoes and slice them (into wedges or rounds).

Peel the onion and garlic. Finely chop the garlic and slice the onion as you prefer.

Add olive oil to the multicooker bowl, then add the vegetables and tomato paste. Pour in the wine, add salt, sugar, and Provence herbs. Mix well and cook for 25 minutes using the "Multicook" or "Baking" function at 180 degrees Celsius.
