Peel the onion and garlic, then chop them finely. Heat the oil in a frying pan and immediately add the onion to fry. When the onion becomes soft, add the garlic and sauté for another couple of minutes.

Wash 2 tomatoes, peel and remove the seeds, then finely chop the flesh. Add it to the pan together with the herbs and bay leaf. Simmer everything over low heat for 10 minutes, covered, stirring a couple of times.

Wash the peppers, remove the seeds and stems, then cut into small cubes. Add them to the pan and simmer for another 10 minutes.

Wash the parsley and chop it finely. Add it to the pan with salt and pepper. Mix and remove from heat.

Wash the eggplants, remaining tomatoes, and zucchini, and slice them into rounds.

Place half of the ingredients from the skillet into a heatproof dish. Then alternately add one portion of sliced vegetables. Add the second half of the stewed vegetables and the remaining slices.
