
Ratatouille with squid

This recipe won't take much time. Do you like vegetable dishes? I really do! I want to share with you a great recipe for a delicious dish that is filling, healthy, and quick and easy to prepare. It's especially relevant after the long winter holidays when we tend to overindulge in tasty treats. To get back in shape, you don't need to starve. Let's make a tasty ratatouille with squid—it's both delicious and healthy, and won't add extra pounds :) Serve it hot.

1. For ratatouille, it's best to use young, small-sized vegetables. I use squid rings. If you have whole squid, they need to be thoroughly cleaned.

2. Place a frying pan with vegetable oil on the stove and heat over medium heat. Meanwhile, peel the onion and carrot and dice them into small cubes. Add to the frying pan.

3. Boil the squid rings. Add them to slightly salted boiling water and cook for 3 minutes.

4. Cut zucchini, eggplant, and bell pepper into cubes, the same size as the carrots. Do not mix the eggplant with the other vegetables!

5. Once the onion and carrots have softened, add the eggplant. I like the vegetables in this dish to remain slightly crisp, not turn mushy. Therefore, I sauté them for only a short time.

6. Are the eggplants slightly soft? Add zucchini and bell pepper.

7. Add salt and black pepper, mix. Cook for 3-4 minutes.

8. Dice the tomato and cut the squid into rings. Reserve a couple of rings for garnishing the dish. If the tomato is very juicy, remove the seed-filled center.

9. Add the tomatoes to the frying pan.

10. Then add the squid. Sauté and simmer for just another minute to a minute and a half.
