Description
The dish is prepared without unnecessary complications. Ratatouille (French: ratatouille) is a vegetable stew originating from Provence. I would like to offer you the version of ratatouille by "mini chef" Remy from the animated film "Ratatouille." Originally, the vegetables were chopped and stewed. Only when the dish reached restaurant kitchens did the method change to slicing vegetables into thin rounds, layering them, and cooking them over a bed of vegetable sauce. This is exactly the version shown in the movie. Of course, it's impossible to recreate the dish precisely as seen in the film, but let's try to get as close to the original as possible. The finished dish can now be served.

Peel the onion, chop and fry in a pan with garlic for 5 minutes.

Wash the pepper, cut it in half, remove the seeds, and grill it. I used the grill mode in the microwave for 15 minutes. Then transfer the pepper into a bag and let it sit for about 10 minutes. After that, peel off the skin and cut the pepper into small cubes.

Make crosswise incisions on the tomatoes and pour boiling water over them, then rinse with cold water and peel. Cut the tomatoes into small cubes.

Peel the celery with a vegetable peeler and finely chop.

Add pepper, tomatoes, and celery to the fried onions.

Then add wine, salt, and herbs, and simmer for a short while. A couple of minutes before the vegetables are half-cooked, add tomato paste.

Transfer the stewed vegetables to a blender and puree.

Then pour the puree into a baking dish and smooth it with a spoon.

Slice zucchini, eggplants, and tomatoes into thin rounds, about 1-2 mm thick.

Place the sliced vegetables on top of the vegetable purée in a circular pattern, alternating all the vegetables.

Prepare the marinade: add 1/2 tsp of Provence herbs to 3 tbsp of olive oil.

Pour the marinade over all the vegetables and, if desired, add a little salt to taste.
