Slice the onion into pieces, and cut the zucchini and eggplants into approximately 1 cm thick rounds. Press the garlic through a garlic press. Remove seeds and stems from the sweet peppers, then cut them into medium-sized pieces. Finely chop the tomatoes.

Heat a skillet over medium heat with vegetable oil. Sauté the eggplants, peppers, and zucchini for about 5–6 minutes, until slightly softened and golden. Then transfer the vegetables to a large bowl.

In the same skillet, sauté the onion, garlic, and thyme leaves until the vegetables become tender.

Return the fried eggplants, zucchini, and peppers back to the pan. Add fresh and pureed tomatoes. Then add salt, ground black pepper, and balsamic vinegar. Cover the pan with a lid and simmer over low heat for half an hour.
