
Ratatouille with eggplant and zucchini

1. Cut the eggplant into cubes. Fry them in a deep skillet or saucepan in oil for 10 minutes. Add a little salt.

2. Then, in the same oil, sauté the onion, diced, with a pinch of salt. Cook for 10 minutes as well.

3. After that, remove the onion and instead sauté the pepper pieces for 5 minutes with a pinch of salt.
