
Ratafia
Description
The recipe won't take much time. You can store this colorful ratafia in the cold all year round, but such a fragrant and delicious alcoholic drink is unlikely to last until the indicated date. Serve it with sweets: candies, cookies, pastries, or a cheese platter.

Prepare the listed ingredients. Ratafia can be made from any berries: raspberries, strawberries, blackcurrants, etc. The main thing is to add sugar to taste, as some berries may be sour.

Wash the currant berries in water, remove the stems, and transfer them to a glass container, preferably a jar that can be tightly sealed. Fill the container with alcohol to the top, covering the berries completely.

Cover the container with a lid and place it in the sun for about 1-2 weeks, allowing the berries to impart their color, flavor, and aroma to the alcohol. Do not store the container any longer than this. Shake the contents every 2 days.

After the specified time, strain the alcohol into a separate container and discard the residue. Pour sugar into a saucepan or pot, add a little of the alcohol and water. Place the container on the stove and boil the syrup for about 1–2 minutes to dissolve the sugar. Pour the syrup into the container with the alcohol, tightly close it and shake well to mix. Refrigerate for 2–3 hours to cool.
