Instructions
- 1
Step 1

Prepare the ingredients according to the recipe list.
- 2
Step 2

Into a mixing bowl, pour warm milk, add yeast, salt, and sugar, and mix until dissolved.
- 3
Step 3

Beat 2 eggs into the dough, mix.
- 4
Step 4

Add softened or melted butter.
- 5
Step 5

Add the flour and knead by hand or with a mixer to form a soft dough that does not stick to your hands.
- 6
Step 6

Gather the dough into a ball, cover with plastic wrap, and place in a warm spot to rise for 1 hour.
- 7
Step 7

While the dough is rising, prepare the filling. Cut the potatoes into small cubes and boil in salted water until half-cooked, or you can do it in a steamer basket, as shown in the photo.
- 8
Step 8

Finely chop the onion and fry in a mixture of vegetable and butter, season with salt and pepper to taste.
- 9
Step 9

Finely chop the fish fillet.
- 10
Step 10

Add the fried onion to the fish.
- 11
Step 11

Add potatoes, 1 tablespoon of sour cream, pepper and salt to taste to the fish, and mix.
- 12
Step 12

The finished dough should increase in volume by 1.5–2 times. Divide the dough into 14 equal parts, each weighing about 95 grams. Roll each piece into a ball, cover with plastic wrap, and let the dough rest for 15–20 minutes.
- 13
Step 13

Roll out the dough into a flat round, and place the filling in the center.
- 14
Step 14

Pinch the edges of the pie on both sides, leaving a small hole in the center. Seal carefully so that it does not open during baking.
- 15
Step 15

To brush the rastegais before baking, prepare a mixture of a small amount of milk and 1 egg yolk. Brush the rastegais with this mixture. If desired, you can place a small piece of butter into each rastegai through the opening left in the center. This will give the filling a delicate creamy flavor.
- 16
Step 16

Bake the open-faced buns in "top-bottom" mode at a temperature of 180 degrees until done, approximately 25 minutes.
- 17
Step 17

Place the finished rastegai on a rack.
